Recipe: Feta Pesto Pasta





This is a very quick and easy dish that can be eaten hot as a dinnertime meal or cold as part of a side dish or lunch (I prefer it cold as a side dish for a barbecue or salad). This dish serves two people.



Ingredients:

- 150g penne pasta
- 60g feta cheese, sliced into cubes
-  8-10 teaspoons of sun-dried pesto
- dried basil
- dried garlic

Method:

1. Boil pasta until softened.

2. Drain pasta.

3. Stir in pesto, feta cheese, basil and garlic, and keep on a very low heat until pasta is hot - this should only be a minute or so.

4. Serve.



I often cook this for tea and leave enough for my lunch the following day, as it's such a quick and simple recipe as well as being very cheap. Despite this, it tastes and looks really great!
